Chickpea Tuna Salad

Looking for an easy weekday lunch recipe?! This easy chickpea salad is so delicious and fresh and isn’t super heavy but it’s still packed with protein and fiber!

Serves: 4

Ingredients:

  • 1/2 small red onion, roughly chopped
  • 1 (15-ounce) can sodium chickpeas rinsed and drained
  • 1 pint cherry tomatoes halved
  • 1  large, seedless cucumber, roughy chopped
  • 1 red bell pepper cored and chopped
  • 12 ounces solid pack albacore tuna in water, drained
  • 1/4  cup parsley chopped
  • 1/4 cup feta cheese
  • 2 large lemon
  • 3 tbsp olive oil
  • 2 tsp garlic powder
  • Salt and pepper taste

Instructions

  1. To a large mixing bowl, add the chickpeas, tomatoes, cucumber, onions, and bell pepper. Drain the tuna and flake into the bowl. 
  2. Add juice from 2 lemons, olive oil, garlic powder, and salt and pepper to taste. Mix to combine and enjoy!
