Quinoa Sweet Potato and Kale Salad

I hate making salads that are boring so instead, this one is jam packed with nutrients AND deliciousness. It meal preps so well so you can make once and eat all week!

Serves: 4


  • 2 sweet potatoes, roasted and chopped
  • 1 can chickpeas, drained and rinsed (optional: if you want crunchy chickpeas, roast in the oven on a sheet pan for about 30 min at 400 degrees F)
  • 8 cups kale
  • 1 cup feta cheese
  • 1 cup quinoa
  • Optional: 1/2 cup unsweetened craisins
  • 1/2 cup slivered almonds

Additional protein add ons: chicken, hard boiled eggs, tofu, salmon


  1. Combine all ingredients in a bowl and mix to combine. Enjoy with your favorite dressing!
