Easy Meal Prep Quiche

The easiest quiche recipe that we love for a weekend breakfast or meal prepped meal.

(Serves 6 people)

Ingredients

  • 1 refrigerated pie crust
  • 2 handfuls of spinach
  • 2 handfuls of cherry tomatoes, sliced in half
  • 2 green onions, chopped
  • 5 large eggs
  • 3/4 cup milk (I used 1%)
  • Salt
  • Pepper

Instructions

  1. Preheat oven to 350 degrees F.
  2. Place the pie dish on a baking sheet and bake for 3 minutes. Remove it from the oven, prick it all over with the tines of a fork, then return to the oven and bake until lightly brown, about 10 minutes more. Reduce the oven temperature to 350 degrees F.
  3. In a large mixing bowl, mix together eggs, milk, and a pinch of salt and pepper.
  4. Put tomatoes, spinach, onion, and any other veggies into the pie crust. Top with egg mixture.
  5. Bake quiche until center is set for about 40-50 minutes. Let the quiche cool for 10 minutes before serving.

Pro tip: We used this as a meal prep meal! Keep in the fridge for up to 4 days.
