The easiest quiche recipe that we love for a weekend breakfast or meal prepped meal.
(Serves 6 people)
Ingredients
- 1 refrigerated pie crust
- 2 handfuls of spinach
- 2 handfuls of cherry tomatoes, sliced in half
- 2 green onions, chopped
- 5 large eggs
- 3/4 cup milk (I used 1%)
- Salt
- Pepper
Instructions
- Preheat oven to 350 degrees F.
- Place the pie dish on a baking sheet and bake for 3 minutes. Remove it from the oven, prick it all over with the tines of a fork, then return to the oven and bake until lightly brown, about 10 minutes more. Reduce the oven temperature to 350 degrees F.
- In a large mixing bowl, mix together eggs, milk, and a pinch of salt and pepper.
- Put tomatoes, spinach, onion, and any other veggies into the pie crust. Top with egg mixture.
- Bake quiche until center is set for about 40-50 minutes. Let the quiche cool for 10 minutes before serving.
Pro tip: We used this as a meal prep meal! Keep in the fridge for up to 4 days.
