Caprese Gnocchi Sheet Pan Meal

Enjoy a fresh twist on the classic Caprese with this one-pan wonder! The Caprese Sheet Pan Meal features savory chicken sausage, roasted veggies, and bursts of mozzarella and basil, providing a balanced, high-protein dinner that’s both nutritious and simple to make. Perfect for busy nights when you need a healthy, no-fuss option!

Makes: 4 servings

Ingredients:

  • 2 pints cherry tomatoes
  • 1 12-oz frozen gnocchi package (I just used the Trader Joe’s frozen package!) – you can omit this if vegetarian
  • 1 package (anywhere from 4-6 links) chicken sausage, sliced
  • 3 cups sliced bell pepper (you can also do this from frozen)
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • Optional seasoning: Italian blend
  • 12 oz bite-sized mozzarella cheese balls (you can omit this if dairy-free)
  • Chopped fresh basil leaves, for serving
  • Optional: balsamic glaze

Instructions:

  1. Preheat oven to 425 degrees F.
  2. Line a sheet pan with aluminum foil and spray with pam.
  3. Pour cherry tomatoes, gnocci, chicken sausage, and bell pepper on sheet pan. Drizzle olive oil on top and then add some salt, pepper and Italian blend seasoning, if using. Mix to combine.
  4. Roast in the oven for about 20 minutes.
  5. Take out of the oven, mix, and top with mozzarella balls. Put back in the oven until cheese is melted, 5-10 minutes.
  6. Top with fresh basil leaves and balsamic glaze.
