4 Ingredient Trader Joe’s Asian Stir Fry

If you’re a Trader Joe’s fan like me, you know I love their easy pre chopped veggies! It makes fixing your metabolism easier and you’ll have more time to do other things (like spend time with your family!)

Serves: 4

Ingredient

  • 4 salmon fillets
  • 1-2 avocado
  • Trader Joe’s (or any store brand honestly!) stir fry mix
  • Pre-made teriyaki sauce
  • Optional: cooked brown rice or quinoa

Instructions

  1. Preheat oven to 350 degrees F and prepare a baking sheet – line with aluminum foil or parchment paper.
  2. Add salmon fillets to the baking sheet. Bake in the oven for ~20 minutes or until cooked through.
  3. While the salmon is cooking, add saute pan to medium heat with some olive oil. Add stir fry veggies. Cook for about 5 minutes, until veggies are basically cooked through. Add teriyaki sauce and mix to combine.
  4. Take veggies off heat. Add veggies to rice (if using), place salmon on top, and add sliced avocado to each bowl. Enjoy!
