Pomegranate Feta Salad

Our go-to meal prep salad that’s packed with healthy fats, fiber, and lean protein.

(Makes 1 serving)

Ingredients

  • 2 cups greens
  • 1-2 tomatoes, sliced
  • 1/4 cucumber, sliced or diced
  • 1/4 cup roasted squash
  • 2 tbsp pomegranate airls
  • 1 tbsp fresh herb such as parley or dill
  • 1/4 cup feta
  • 1/4 cup cooked wild rice, brown rice, or quinoa
  • 1 roasted salmon fillet

Instructions

  1. Combine all ingredients in a bowl.
  2. Add dressing of choice.
