No Bake Cookie Dough & Cake Batter Protein Bars

Looking for a sweet treat? These bars combine a delicious cookie dough and sweet cake batter that don’t require baking! Cashew butter is full of monounsaturated fats, minerals, and vitamins and is a great plant based protein. As it is one of the main ingredients in this recipe it will provide you with many healthy benefits such as increased energy, reduced inflammation, regulation of blood sugar levels, and many more! (Servings: 6 large bars)

Ingredients – cookie dough layer

  • ½ cup cashew butter
  • ½ cup almond flour
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • ½ cup dark chocolate chips

Ingredients – chocolate layer

  • 1 cup dark chocolate chips 
  • 1 tbsp coconut oil
  • Sea salt

Ingredients – cake batter layer

  • ½ cup cashew butter
  • 2 tbsp almond milk
  • 2 scoops vanilla protein powder
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • ¼ cup rainbow sprinkles

Instructions

  1. In a bowl, mix together all of the ingredients of the cookie dough layer.
  2. Press this mixture into a pan lined with parchment paper.
  3. Move this to the fridge while you begin the cake batter layer.
  4. Mix all of the ingredients of the cake batter layer.
  5. Remove the pan from the fridge and press down the cake batter layer on top of the cookie dough layer.
  6. In a microwavable bowl, melt the chocolate chips and cashew butter.
  7. Pour this on top of the two layers, add flaky sea salt, and freeze for one hour.
