Mozzarella Stuffed Bell Peppers

The Mozzarella Stuffed Bell Pepper is a protein-packed, quick-to-prepare meal perfect for busy nights. Each bell pepper is filled with a flavorful mix of quinoa, lean ground turkey or beef, and topped with gooey mozzarella for a delicious, satisfying dinner. This recipe is both nutritious and easy, offering a hearty yet light dish that requires minimal time and effort—ideal for when you want a wholesome meal without the fuss.

Makes: 4 servings

Ingredients:

  • 2 bell peppers
  • 1 can of fire roasted tomatoes
  • 4 oz of mozzarella
  • 1 cup quinoa
  • Optional: pepperoni
  • Italian seasoning blend (or just preferred seasoning like Oregano, Thyme, Parsley, etc)

Instructions:

  1. Preheat oven to 425 degrees F.
  2. In a 8×8 or 9×9 square pan, spread about 4 tbsp of the fire roasted tomatoes to cover the bottom of the pan.
  3. Place 4 bell pepper halves in pan, with the “hole” or cavity in each bell pepper fasting upward.
  4. Put about 2 tbsp of tomato in each cavity of the bell pepper. Mix about 1/4 cup quinoa in each bell pepper. **SO IMPORTANT, MIX WITH TOMATO SAUCE SO IT IS NOT JUST SITTING ON TOP.
  5. Place 1 slice of mozzarella on top of each bell pepper. (Optional – you could also add pepperoni here)
  6. Roast in the oven for about 25 minutes.
  7. Take out of the oven and sprinkle Italian seasoning on top. Enjoy!
