Ingredients
- 2 tortillas
- 2 tbsp hummus
- 1/2 cup black beans
- 1/2 cup sliced bell pepper
- 1/2 cup chopped onion
- 1 tbsp lemon juice
- Seasoning for fajitas (chili powder, cayenne pepper, garlic powder)
- 1 tbsp olive oil
- Optional toppings: greek yogurt or DF plain yogurt, avocado, guac, salsa
Instructions
- Slice bell pepper and onion and place in a small pan on med/high heat with olive oil to saute.
- Saute vegetables for 8-10min and add seasoning and lemon juice to flavor and set aside to use for later
- Put black beans into a small bowl and lightly mash with the back of your fork
- Take 1 tortilla and spread hummus evenly over the entire surface
- In a larger pan, place tortilla with hummus spread and add mashed black beans, and fajita veggies
- Add another tortilla with hummus spread on top of the assembled tortilla in the pan
- Let both side of the assembled quesadilla brown
- Top with toppings of choice such as guacamole, pico de gallo, corn salsa, or cilantro
