Ingredients
- ½ cup plain greek yogurt
- 2 Tbsp apple cider vinegar
- 2 Tbsp lemon juice
- ¼ cup olive oil
- 2 Green onions
- 3 small cucumbers
- 2 large tomatoes
- 3 cloves of garlic
- 1 Tbsp dried peppermint
- 1 Tbsp fresh mint leaves
- 1 Tbsp dried sumac berries
- ½ cup chopped parsley
- Salt and pepper to taste
- 2 cups plain pita chips
Directions
- Combine yogurt, apple cider vinegar, lemon juice, and olive oil in a large bowl to make dressing.
- Wash and dice all produce (cucumber, tomatoes, green onion, and parsley) into bite size pieces. Add to bowl.
- Mince garlic and add to bowl along with chopped fresh mint and dried mint, Sumac and salt and pepper. Mix until well combined.
- Add pita chips and incorporate into salad. Enjoy!
