Cranberry White Chocolate Bars

(Yields 24 serving; 256 kcal, 12.9g fat, 2.6g protein, 33.3g carb per serving)

Ingredients

  • Bar base:
    • 1 1/2 cups all-purpose flour
    • 1 tsp baking powder
    • 1/2 tsp salt
    • 12 tbs unsalted butter
    • 1 1/2 cup light brown sugar, packed
    • 2 large eggs, gently beaten
    • 2 tsp vanilla
    • 1 tsp orange zest (or 1 tbs orange juice)
    • 3/4 cup dried cranberries
    • 1 cup white chocolate chips
  • Frosting
    • 1 2/3 cup white chocolate, melted
    • 8 Oz cream cheese, soften
    • 1 1/2 cups confectioners sugar
    • 1 tsp vanilla
    • 1 tbs orange juice
    • 1 tsp orange zest (or one extra tbs juice)
  • Topping
    • 1/2 cup dried cranberries
    • 2/3 white chocolate, melted

Directions

  1. Preheat oven to 350. Line a 9×13 baking pan with parchment paper
  2. Brown the butter in a small saucepan. When butter begins to foam, stir continuously for 5-8 minutes or until you see the butter turn a golden brown color. Once the butter becomes golden, remove from heat and pour into a bowl to stop the cooking. Let cool.
  3. Combine flour, baking powder, and salt in medium bowl
  4. In a large bowl, combine cooled butter and brown sugar. Add eggs, vanilla, and orange and mix well.
  5. Fold dry ingredients into wet ingredients; do not over mix. Fold in chocolate chips and dried cranberries. Pour into prepared pan and smooth out into even layer.
  6. Bake until top is lightly browned, shiny, and cracked, about 22 to 25 minutes. Cool completely to room temperature.
  7. Combine frosting ingredients in a medium bowl and whisk until mixed.
  8. Spread frosting over the cooler bars.
  9. Sprinkle dried cranberries and drizzle melted white chocolate over cranberries.
