- Bar base:
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 12 tbs unsalted butter
- 1 1/2 cup light brown sugar, packed
- 2 large eggs, gently beaten
- 2 tsp vanilla
- 1 tsp orange zest (or 1 tbs orange juice)
- 3/4 cup dried cranberries
- 1 cup white chocolate chips
- Frosting
- 1 2/3 cup white chocolate, melted
- 8 Oz cream cheese, soften
- 1 1/2 cups confectioners sugar
- 1 tsp vanilla
- 1 tbs orange juice
- 1 tsp orange zest (or one extra tbs juice)
- Topping
- 1/2 cup dried cranberries
- 2/3 white chocolate, melted
Directions
- Preheat oven to 350. Line a 9×13 baking pan with parchment paper
- Brown the butter in a small saucepan. When butter begins to foam, stir continuously for 5-8 minutes or until you see the butter turn a golden brown color. Once the butter becomes golden, remove from heat and pour into a bowl to stop the cooking. Let cool.
- Combine flour, baking powder, and salt in medium bowl
- In a large bowl, combine cooled butter and brown sugar. Add eggs, vanilla, and orange and mix well.
- Fold dry ingredients into wet ingredients; do not over mix. Fold in chocolate chips and dried cranberries. Pour into prepared pan and smooth out into even layer.
- Bake until top is lightly browned, shiny, and cracked, about 22 to 25 minutes. Cool completely to room temperature.
- Combine frosting ingredients in a medium bowl and whisk until mixed.
- Spread frosting over the cooler bars.
- Sprinkle dried cranberries and drizzle melted white chocolate over cranberries.
