Chocolate Peanut Butter Energy Bites

Energy bites are some of my favorites to make during this busy season of life (and always). I love how easy they are to take on the go AND how they keep me filled and satisfied as a busy mom and professional. This chocolate edition makes a great dessert too 😉

Serves: Makes about 12 balls

Ingredients:

  • 1 cup oats
  • 3 tbsp unsweetened cocoa powder
  • 2 tbsp flaxseed meal
  • 1 tbsp chia seed
  • 3/4 cup creamy peanut butter or almond butter
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • Optional: mini or regular dark chocolate chips

Instructions

  1. Combine all ingredients (except choc chips if using,) in a stand mixer. Combine with paddle attachment.
  2. Scrape down sides of bowl and paddle to combine all dough.
  3. Add chocolate chips if using. Using hands, make dough into balls. There should be about 12 balls, but it also depends on how big/small you make them.
  4. Store in the fridge for a week or up to a month in the freezer.
