Energy bites are some of my favorites to make during this busy season of life (and always). I love how easy they are to take on the go AND how they keep me filled and satisfied as a busy mom and professional. This chocolate edition makes a great dessert too 😉
Serves: Makes about 12 balls
Ingredients:
- 1 cup oats
- 3 tbsp unsweetened cocoa powder
- 2 tbsp flaxseed meal
- 1 tbsp chia seed
- 3/4 cup creamy peanut butter or almond butter
- 1/4 cup honey
- 1 tsp vanilla extract
- Optional: mini or regular dark chocolate chips
Instructions
- Combine all ingredients (except choc chips if using,) in a stand mixer. Combine with paddle attachment.
- Scrape down sides of bowl and paddle to combine all dough.
- Add chocolate chips if using. Using hands, make dough into balls. There should be about 12 balls, but it also depends on how big/small you make them.
- Store in the fridge for a week or up to a month in the freezer.
