Ingredients
- 1.5 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp ground nutmeg
- 1 whole egg
- 1/2 cup vegetable oil
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp vanilla extra
- 1 cup shredded zucchini
- 1 cup semi-sweet chocolate
Directions
- Preheat oven to 350 degrees. Grease load pan or line with parchment paper
- In large bowl, stir together flour, baking powder, salt, baking soda, cinnamon, and nutmeg
- In a separate bowl, whisk together egg, oil, sugar, brown sugar, and vanilla until smooth
- Add shredded zucchini and chocolate chips to egg mixture. Gently combine
- Add zucchini mixture to flour mixture, gently stirring to combine. Be careful not to over-mix
- Pour into prepared baking pan and bake for 55-65 minutes, until a toothpick in the center comes out clean
- Let cool completely before slicing
