Carrot Cake Baked Oatmeal Cup

Ingredients

  • OATMEAL INGREDIENTS
  • 1/2 cup rolled oats
  • 1/2 tbs chia seeds
  • 1/4 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1 tsp baking powder
  • 1/2 tbs walnuts, crushed
  • 1 tbs raisins
  • 1/2 large carrot or 3 baby carrots, shredded
  • 1 tsp vanilla extract
  • 2/3 cup milk
  • Optional: protein powder
  • ICING INGREDIENTS:
  • 1 tbs cream cheese
  • 1/2 tsp vanilla extract
  • 1 tsp powdered (confectioner’s) sugar
  • 1 tsp lemon juice

Directions

  1. Preheat oven to 350. Spray a small ramekin with cooking spray.
  2. Mix oatmeal ingredient together in a small bowl. Pour into prepared ramekin and bake for 25 minutes.
  3. In the meantime, combine icing ingredients in a small, microwave safe bowl. You may want to microwave the cream cheese to make it easier to mix. Move to the refrigerator while you wait for oatmeal to finish baking.
  4. Once oatmeal is down, carefully remove from oven and drizzle icing over. Microwave the icing if desired for a a thinner consistency
