Hummus Black Bean Quesadilla Recipe

his is a delicious recipe for anyone who is dairy-free, vegetarian, or just wants a super yummy meal.

(Serves 1; 430 kcal, 72g carb, 25g pro, 13g fat per serving)


  • 2 tortillas
  • 2 tbsp hummus
  • 1/2 cup black beans
  • 1/2 cup sliced bell pepper
  • 1/2 cup chopped onion
  • 1 tbsp lemon juice
  • Seasoning for fajitas (chili powder, cayenne pepper, garlic powder)
  • 1 tbsp olive oil
  • Optional toppings: greek yogurt or DF plain yogurt, avocado, guac, salsa


  1. Slice bell pepper and onion and place in a small pan on med/high heat with olive oil to saute.
  2. Saute vegetables for 8-10min and add seasoning and lemon juice to flavor and set aside to use for later
  3. Put black beans into a small bowl and lightly mash with the back of your fork
  4. Take 1 tortilla and spread hummus evenly over the entire surface
  5. In a larger pan, place tortilla with hummus spread and add mashed black beans, and fajita veggies
  6. Add another tortilla with hummus spread on top of the assembled tortilla in the pan
  7. Let both side of the assembled quesadilla brown 
  8. Top with toppings of choice such as guacamole, pico de gallo, corn salsa, or cilantro
