Chocolate Chip Zucchini Bread

Ingredients

  • 1.5 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp ground nutmeg
  • 1 whole egg
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp vanilla extra
  • 1 cup shredded zucchini
  • 1 cup semi-sweet chocolate

Directions

  1. Preheat oven to 350 degrees. Grease load pan or line with parchment paper
  2. In large bowl, stir together flour, baking powder, salt, baking soda, cinnamon, and nutmeg
  3. In a separate bowl, whisk together egg, oil, sugar, brown sugar, and vanilla until smooth
  4. Add shredded zucchini and chocolate chips to egg mixture. Gently combine
  5. Add zucchini mixture to flour mixture, gently stirring to combine. Be careful not to over-mix
  6. Pour into prepared baking pan and bake for 55-65 minutes, until a toothpick in the center comes out clean
  7. Let cool completely before slicing
