  2. 2. In a large mixing bowl, toss the sweet potato medallions with olive oil, ensuring each piece is lightly coated
  3. 3. In a small bowl, combine the Parmesan cheese, garlic powder, oregano, thyme, smoked paprika, salt, and pepper
  4. 4. Sprinkle the seasoning mix over the sweet potatoes and gently toss until they are coated with the cheese and herbs
  5. 5. Place the seasoned medallions in a single layer on the prepared baking sheet
  6. 6. Bake in the preheated oven for about 25-30 minutes, flipping halfway through
