Sweet Potato Egg Bake (Sweet Potato Quiche)
This sweet potato egg bake has been all over my feed, and I finally understand why. It looks impressive, it meal preps perfectly, and it comes together with ingredients you probably already have. Sweet potatoes as the base, whisked eggs, chickpeas, spinach, feta, and green onions baked into a dense, satisfying slice you can eat all week. As a dietitian, I love it because it hits protein, fiber, and complex carbs in one pan without any tracking required.
