Ingredients
- 1 C Cooked brown rice
- 1 tsp rice vinegar
- ¼ tsp of salt
- ½ C Shredded carrots
- ½ C Diced cucumbers
- ½ C Diced avocado
- ½ C Diced mango
- Dried seaweed (Optional)
- 2 Tbsp low sodium soy sauce
- Spicy mayo sauce
- ¼ C Mayonnaise
- 1 Tbsp Sriracha
- ½ tsp lime juice
Directions
- Prepare rice; cook according to packaging instructions. Once cooked, add rice vinegar and salt to rice and stir to combine.
- Wash and cut all produce.
- Prepare spicy mayo by combining mayonnaise, sriracha, and lime juice.
- Build a bowl by starting with your rice at the bottom, arrange veggies on top, and garnish with seaweed, soy sauce and spicy mayo. Enjoy!
