These Pumpkin Protein Bars are the perfect fall-inspired snack to keep you energized and satisfied. Made with wholesome ingredients like oats, pumpkin puree, and a touch of maple syrup, they’re packed with protein, fiber, and a warm hint of cinnamon. Enjoy these bars for breakfast on-the-go or as a tasty midday boost!
Makes: 12 bars
Ingredients:
- 1 cup oats
- 1/2 cup whole wheat or almond flour
- 1 scoop vanilla protein powder
- 1 tbsp ground flaxseed
- 1 tsp cinnamon
- ½ teaspoon pumpkin pie puree
- 1 tsp baking powder
- ¼ tsp baking soda
- 2 large eggs
- 1 cup pumpkin puree
- 1/4 cup maple syrup
- 3 tbsp melted coconut oil
- 1 tsp vanilla extract
Instructions:
- Preheat the oven to 350 degrees F and coat an 8×8 pan with nonstick spray.
- Add all ingredients to a bowl and stir together to combine.
- Place batter into prepared pan.
- Bake for about 22 min or until lightly browned.
- Remove from oven and let cool before enjoying.
