Makes: 1 serving
Ingredients:
- ¼ cup all purpose flour
- ½ teaspoon pumpkin pie spice
- ⅛ teaspoon baking powder
- 1 scoop protein powder
- Pinch of salt
- 2 tbsp maple syrup
- 3 tbsp almond milk or regular milk
- 1 ½ tbsp canned pumpkin puree
- 1 tbsp coconut oil
- 1-2 tbsp chocolate chips (optional)
Instructions:
- Combine flour, pie spice, baking powder, protein powder, and salt in a medium mug. Mix to combine.
- Add remaining ingredients and mix to combine.
- Microwave for 60 seconds. If not completely done, microwave for additional 20 seconds and so on until cooked. Serve warm as is (or with a scoop of ice cream!)
