Protein Pumpkin Mug Cake

Satisfy your sweet tooth with this quick and cozy Protein Pumpkin Mug Cake—a perfect fall treat made by a registered dietitian and nutrition coach. Packed with protein and warm pumpkin spice flavors, it’s a guilt-free indulgence designed to boost your metabolism while keeping you fueled and satisfied. Ideal for busy women who love seasonal flavors without the extra calories!

Makes: 1 serving

Ingredients:

  • ¼ cup all purpose flour
  • ½ teaspoon pumpkin pie spice
  • ⅛ teaspoon baking powder
  • 1 scoop protein powder
  • Pinch of salt
  • 2 tbsp maple syrup
  • 3 tbsp almond milk or regular milk
  • 1 ½ tbsp canned pumpkin puree
  • 1 tbsp coconut oil 
  • 1-2 tbsp chocolate chips (optional)

Instructions:

  1. Combine flour, pie spice, baking powder, protein powder, and salt in a medium mug. Mix to combine.
  2. Add remaining ingredients and mix to combine.
  3. Microwave for 60 seconds. If not completely done, microwave for additional 20 seconds and so on until cooked. Serve warm as is (or with a scoop of ice cream!)
