Protein Banana Bread

This Protein Banana recipe is a high-protein powerhouse that sneaks in nutrient-dense greens, making it an excellent choice for boosting metabolism. Perfect for busy women, it’s a quick and easy option for breakfast or a snack, providing long-lasting energy and nourishment to fuel your day.

Makes: 1 loaf

Ingredients:

  • 1.5 cups mashed overripe bananas (about 2 cups)
  • 1 cup plain greek yogurt 
  • 1/4 cup unsweetened applesauce 
  • 2 tbsp honey
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup flour
  • 1 cup protein powder
  • 1.5 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 tsp ground cinnamon
  • Handful of spinach

Instructions:

  1. Preheat oven to 350 degrees F. Line a loaf pan with parchment paper and spray with pam.
  2. Combine mashed bananas, yogurt, applesauce, honey, eggs, and vanilla in a mixing bowl.
  3. Slowly add dry ingredients, not the spinach yet, and mix to combine.
  4. Stir in a handful of spinach.
  5. Pour into loaf pan and place in oven.
  6. Cook for about 55 min until loaf is cooked through. Let cool for at least 10 min.
