Mushroom, Goat Cheese & Spinach Frittata
Frittatas make the BEST meal prep breakfast OR breakfast for dinner! I love adding in whatever veggies I have on hand – I used mushroom and spinach for this recipe. Serves: 6

Ready To Start?
- 1. Preheat oven to 350 degrees F.
- 2. In a large skillet, head olive oil on medium heat. Add mushrooms and cook for about 3 minutes. Add in spinach and cook for another 2-3 minutes.
- 3. While this is cooking, add eggs, milk, goat cheese, and salt and pepper to a bowl. Whisk to combine.
- 4. Once mushroom and spinach is cooked down, turn off stove and add egg mixture.
- 5. Pop into the oven and cook for 15-20 minutes or until eggs have set.
