- 1. Rinse zucchini and cut in half lengthwise. Slice each half into ¼ inch slices.
- 2. Cut roasted red peppers into small pieces.
- 3. Add zucchini, roasted red pepper, chickpeas, and olive oil into a large pan and saute for 5 minutes on medium-high heat.
- 4. Add in all the seasonings and lemon juice and saute for another 5 minutes, or until everything is cooked through.
- 5. Enjoy as a side dish or toss into salad!
