Mediterranean Falafel Bowl
This falafel bowl is super flavorful and takes just minutes to prepare! Plus, you can switch up your toppings depending on what you have on hand. Serves: 1

Ready To Start?
- 1. Cook your falafel according to the package instructions. Meanwhile, combine your greens and cooked grain in a bowl and lightly dress with olive oil, lemon juice, salt, and pepper.
- 2. To your bowl, add the chopped cucumber, cherry tomato, pickled onions, cooked falafel, and hummus. Top with any other toppings you’d like and enjoy!

2 cups of greens

½ cup cooked grain like farro or brown rice

¼ cup chopped cucumber

¼ cup chopped cherry tomato

Light drizzle of extra virgin olive oil

Squeeze of lemon juice

Dash of salt and pepper

2 tbsp hummus

2 tbsp pickled onions

Other toppings: shredded carrot, sliced olives, parsley, crumbled feta, tzatziki, pita bread
