I love making a quiche ahead of time for an easy AM breakfast on a busy morning OR as a protein-packed snack!
Pro tip: I love having this for dinner with a side salad!
Ingredients
- 1 9-inch frozen pie crust, cooked according to instructions (can use GF crust)
- 6 large eggs
- 1 cup milk
- Handful spinach or other greens
- 1/4 chopped onion (optional)
- 1/2 cup grated cheese
- 1 tsp ground nutmeg
- Pinch of salt and pepper
Instructions
- Cook pie crust according to instructions if you haven’t already. Preheat oven to 400 degrees F.
- In a large bowl, combine eggs, milk, and salt and pepper. Whisk to combine.
- Add spinach, chopped onion, grated cheese, and nutmeg. Whisk to combine again.
- Pour egg mixture into pie crust. Cook for about 30 minutes until eggs are set and cooked through.
- If freezing after, wrap the quiche in a layer of plastic wrap then wrap in foil. You can freeze for 6 months.
