Ready To Start?

  1. 1. Marinate the chicken overnight in a zipbloc back using 1/3 cup olive oil, 2 tbsp garlic powder, onion powder, cumin, 3 tbsp lime juice and salt and pepper.
  2. 2. Once chicken has marinated, roast chicken in the oven at 375 degrees F for about 30 min or until chicken is cooked through. Slice once cooked. You can also grill the chicken.
  3. 3. Make the dressing when chicken is cooking using 2/3 cup olive oil, 1 tbsp garlic powder, 3 tbsp lime juice, red wine vinegar, djion mustard, and cilantro. Whisk in a bowl to combine. Set aside.
  4. 4. Make your bowls using cooked chicken and rice! Add ingredients of choice. Drizzle sauce on the top. Enjoy!

  • 4 skinless, boneless chicken breast (4 servings worth)

  • 1 cup olive oil

  • 3 tbsp garlic powder

  • 1 tbsp onion powder

  • 2 tsp cumin

  • 6 tbsp lime juice

  • 2 cup cooked rice

  • Toppings: sliced cucumber, pickled onion, tomato, bell pepper, corn, avocado, cilantro

  • 1 tbsp dijon mustard

  • 1 tbsp red wine vinegar

  • 2 tbsp chopped cilantro

  • Salt and pepper
