High Protein Kale Egg Bites

High Protein Kale Egg Bites are a nutritious and convenient option for breakfast or a snack on the go. These egg bites are easy to make and packed with protein, featuring fresh kale for a healthy twist. Enjoy a delicious and energizing start to your day with these savory, protein-rich bites.

Makes: 12 servings

Ingredients:

  • 8 eggs
  • 1 cup chopped mushrooms
  • 2 cups finely chopped kale
  • 2/3 cup cottage cheese
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray a muffin tin with pam or grease. Make sure to grease each muffin hole thoroughly to avoid sticking.
  3. Combine all ingredients in a large bowl and whisk to combine. Pour mixture into muffin tin – the mixture should be enough for about 12 muffins.
  4. Cook in the oven for about 20 minutes until egg is thoroughly cooked through.
  5. Let cool for 10 minutes and enjoy or store in the fridge for 1 week or freezer for 1 month.
