High Protein Kale Egg Bites are a nutritious and convenient option for breakfast or a snack on the go. These egg bites are easy to make and packed with protein, featuring fresh kale for a healthy twist. Enjoy a delicious and energizing start to your day with these savory, protein-rich bites.
Makes: 12 servings
Ingredients:
- 8 eggs
- 1 cup chopped mushrooms
- 2 cups finely chopped kale
- 2/3 cup cottage cheese
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
Instructions
- Preheat oven to 350 degrees.
- Spray a muffin tin with pam or grease. Make sure to grease each muffin hole thoroughly to avoid sticking.
- Combine all ingredients in a large bowl and whisk to combine. Pour mixture into muffin tin – the mixture should be enough for about 12 muffins.
- Cook in the oven for about 20 minutes until egg is thoroughly cooked through.
- Let cool for 10 minutes and enjoy or store in the fridge for 1 week or freezer for 1 month.
