Makes: 6 servings (Bites)
Ingredients:
- 1 cup egg whites
- ½ cup diced vegetables (bell peppers, onions)
- ½ cup crumbled feta
- Salt and pepper to taste
- Cooking spray
- Muffin tin
Instructions:
- Preheat your oven to 350°F
- grease a muffin tin with cooking spray
- In a mixing bowl, whisk the egg whites until frothy. Add salt and pepper to taste.
- Fold in the diced vegetables and cheese
- Divide the mixture evenly among the muffin cups, about three quarters full
- Bake in the preheated oven for 20-25 minutes
