High Protein Crockpot Chickpea & Veggie Soup

Looking for an easy, nutrient-packed meal? This high-protein crockpot chickpea and veggie soup is perfect for busy women seeking a healthy and satisfying option. Loaded with plant-based protein, fiber, and colorful vegetables, this hearty soup is a simple, set-it-and-forget-it recipe that fuels your body while supporting your wellness goals.

 

Makes: 6 servings

Ingredients:

  • 1 yellow onion, diced
  • 2 celery stalks diced
  • 3 carrots peeled, chopped
  • 1 red bell pepper, chopped
  • 5 garlic cloves minced
  • 4 cups vegetable broth low-sodium
  • 1 tablespoon curry powder
  • 2 teaspoons smoked paprika
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cumin
  • 1/2 teaspoon kosher salt
  • 30 ounces chickpeas cans, drained
  • 4 handfuls of spinach
  • 2 cups brown rice or quinoa, cooked

Instructions:

  1. Combine all ingredients except the chickpeas, spinach, or brown rice in crockpot.
  2. Cook for 4-5 hours on low or 2-3 hours on high.
  3. Add in chickpeas, spinach, and brown rice when time is up. Cook for additional 30 minutes and then serve as is.
  4. For additional protein, add a dollop of Greek yogurt on top!
