Ready To Start?

  1. 1. Preheat oven to 325 degrees F. Grease a muffin tin - make sure thoroughly so the eggs don't stick!
  2. 2. Mix together all ingredients in large bowl. I recommend using a whisk!
  3. 3. Evenly distribute egg mixture to the muffin tin - it should make about 12 egg bites.
  4. 4. Cook for about 25 minutes until eggs are thoroughly cooked through.
  5. 5. Store in the refrigerator for 1 week or in the freezer for 1 month.

  • 1 cup cottage cheese

  • 1/2 cup feta cheese

  • Any raw or roasted veggies , chopped (I used halved grape tomatoes, about 1 cup full)
