  1. 1. Preheat oven to 350 degrees F. Grease a muffin tin thoroughly.
  2. 2. In a bowl, combine the butter, applesauce, yogurt, egg, and vanilla.
  3. 3. Add the oats, flour, sugar, protein powder, cinnamon, baking powder, baking soda, and salt. Mix until combined.
  4. 4. Fold in chopped apples.
  5. 5. Divide batter into muffin tins and cook for 20 min or until cooked through.
  6. 6. Let cool for at least 10 minutes.

  • 1/4 cup butter, melted

  • 1/2 cup unsweetened apple sauce

  • 1 egg

  • 1/2 cup plain Greek yogurt - I used 2% Fage

  • 2 tsp vanilla extract

  • 1.5 cup oats

  • .5 cup flour

  • .5 cup sugar

  • 2/3 cup vanilla or unflavored protein powder

  • 1 tbsp cinnamon

  • 1 tsp baking powder

  • .5 tsp baking soda

  • .25 tsp salt

  • 1 large apple, diced
