Healthy Cottage Cheese Chocolate Chip Muffins

These protein-packed muffins are soft, perfectly spiced, and naturally sweetened with maple syrup. Made with blended cottage cheese and rolled oats, they offer a wholesome balance of fiber and protein—ideal for a satisfying breakfast or snack. A touch of allspice adds warmth and depth, while mini dark chocolate chips on top create the perfect hint of indulgence. Quick to make and naturally gluten-free, these muffins are a nutritious, grab-and-go option for busy mornings or a cozy afternoon treat.

Makes: 9 muffins

Ingredients:

  • 1 cup of plain cottage cheese
  • 1 ¼ cup of rolled oats
  • 2 eggs
  • 2 tablespoons of maple syrup
  • 2 teaspoons of vanilla
  • 2 teaspoons of baking powder
  • 2 ½ teaspoons of allspice 
  • Pinch of salt
  • ¼ cup of dark chocolate mini chocolate chips

Instructions:

  1. Preheat the oven to 350 degrees F
  2. Prepare a muffin tin with liners or grease (non-stick)
  3. Add cottage cheese, oats, maple syrup, eggs, vanilla, baking powder, allspice, and salt in a blender and blend
  4. Fill 9 out of the 12 muffin cups evenly with the mixture 
  5. Sprinkle the chocolate chips on the top of each muffin 
  6. Bake for about 20-22 minutes until the muffins start to golden
  7. Remove from the oven to cool and enjoy!
