These savory, crunchy crackers hit the spot as the perfect snack, high in protein, fiber, and healthy fats, they are suitable for a healthy metabolism. They are nutrient dense and promote long-lasting satiety in between meals.
Makes: 6 servings
Ingredients:
- ½ cup sunflower seed kernels
- 1/3 cup sesame seeds
- 1/3 cup hemp seeds
- 1/8 cup chia seeds
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp nutritional yeast
- 2 tbsp chickpea flour
- ¾ tsp salt
- ½ cup warm water
Instructions:
- Preheat oven to 350 degrees Fahrenheit.
- In a blender, pulse the sunflower kernels a few times until they are a crumbly texture.
- In a medium bowl, combine the dry ingredients including the blended sunflower kernels.
- Warm up the water and add it along with ~half the cracker mix back into the blender. Pulse until the mixture is mostly blended.
- Transfer the blended mix back into the bowl and mix everything together until the liquid is well distributed and a cohesive dough has formed.
- Line a baking sheet with a Silpat, silicone baking mat, or parchment paper and spread the cracker dough onto it very thinly, about 2 mm thick.
- With a knife or pizza wheel, score the dough into small squares.
- Bake the crackers for 80-90 minutes, or until golden.
- Allow the crackers to cool, then carefully separate them.
- Enjoy as a nutritious snack or part of lunch!
