Crockpot Pumpkin Soup

 

This Crockpot Pumpkin Soup is a healthy and comforting dish packed with nutrients. Made with pure pumpkin, coconut milk, and warming spices, it’s a creamy yet light option perfect for cozy fall meals while still reaching your health goals.

Makes: 4 servings

Ingredients:

  • 1 medium yellow onion chopped
  • 4 cloves garlic, coarsely chopped
  • 2 15-oz canned pumpkin puree
  • 1 15-oz can tomato sauce
  • 2 cups veggie or chicken stalk
  • 1/2 tsp cinnamon
  • 2 tsp salt
  • 2 tsp pepper
  • 4 cups kale or spinach
  • 1 cup canned coconut milk
  •  Freshly ground pepper and salt to taste
  • Optional herbs to top: rosemary

Instructions:

  1. Add all ingredients except the greens and coconut milk in a slow cooker. Turn on low for ~6 hours or high for 2-3 hours.
  2. Add in kale and coconut milk and cook another hour.
  3. Serve as is – can add more coconut milk if you want it thinner.
  4. Add more salt and pepper to taste.
