Copycat Sweetgreen Salad: Garden Cobb

I love a good Sweetgreen salad, but sometimes it’s just as easy (and honestly, cheaper!), to make it at home yourself!

Serves: 4

Ingredient

  • 4 cups roughly chopped romaine (I used Kale because that’s what I had that day!)
  • 4 cups spring mix
  • 2 cups roasted and chopped sweet potato
  • 1/2 cup sliced onion
  • 1/2 cup sliced almonds
  • 2 cups chopped tomato
  • 2 avocado, sliced
  • 8 hard boiled eggs (2 per serving)
  • 1/2 cup crumbled blue cheese (can omit!)

Optional dressing: balsamic vinaigrette

Instructions

  1. Add all ingredients into a large salad bowl or 4 tupperware containers equally and enjoy with your favorite dressing of choice!
