This quinoa salad is refreshing for hot summer months and is an easy side or as a main dish with additional protein like salmon, chicken, or chickpeas!
(Servings: 4)
Ingredients
- 2 cup cooked quinoa
- 8 oz fresh mozzarella balls halved
- 1.5 cups cherry tomatoes halved
- 1/2 cup fresh basil chopped
- 2 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Cook quinoa according to package.
- Add all ingredients into a bowl and mix to combine. Ad salt and pepper to taste.
- Serve immediately or store in the fridge.
