Almond Joy Stuffed Dates

Need a holiday treat!? These dates take a fun spin on a class – Almond Joys! You still get the delicious flavor without all pf the extra added sugar.

Serving size: 2 dates

Pro tip: Serve with a protein-rich snack

Ingredients

  • 8 medjool dates, pitted
  • 1/4 cup shredded coconut, unsweetened
  • 3 tbsp coconut milk
  • 1 tbsp maple syrup
  • 8 almonds
  • 1/4 cup dark chocolate
  • 1 tsp coconut oil

Instructions

  1. Mix together the shredded coconut, coconut milk, and maple syrup.
  2. Spoon coconut mixture into the pitted dates. Top each with an almond.
  3. In a small bowl, combine chocolate and coconut oil and melt. Drizzle over the dates.
  4. Place in the freezer and enjoy as desired!
