- 1. Mix together the oats, coconut flakes, maple syrup, chunky almond butter, and protein powder for the oat layer. Use water to thin if the mixture is too dry. Divide and firmly press the oat mixture into 12 muffin cups.
- 2. Next, add the chocolate chips and coconut oil into a microwave safe bowl. Heat the mixture in intervals until the chocolate is fully melted.
- 3. Spoon the melted chocolate over the oat layer and top with almonds if desired. Place the muffin tray in the freezer for 30 minutes or until the chocolate is hardened.
- 4. Remove the oat cups from the muffin pan once they have set and store them in the fridge or freezer.
