Zucchini Feta & Pistachio Salad
This refreshing Zucchini Feta & Pistachio Salad is the perfect blend of crisp veggies, creamy feta, and crunchy pistachios—an easy, nutritious side dish or light lunch that's packed with flavor and texture.

Ready To Start?
- 1. Cook 1 cup of orzo according to package instructions.
- 2. Meanwhile, prep zucchini. Cut into small, quarter size bites. Then, heat 2 tbsp olive oil in a skillet. Add zucchini and sauté until golden, about 6 minutes. During the final 2 minutes, add shallots and garlic powder.
- 3. Turn off and transfer zucchini mixture to pasta. Add a tsp of salt and a tsp of pepper.
- 4. Add remaining salad ingredients – chickpeas, feta, pistachios, parsley, and dill. Season everything with salt, pepper, and lemon juice. Mix to combine.
