This refreshing Zucchini Feta & Pistachio Salad is the perfect blend of crisp veggies, creamy feta, and crunchy pistachios—an easy, nutritious side dish or light lunch that's packed with flavor and texture.

Ready To Start?

  1. 1. Cook 1 cup of orzo according to package instructions.
  2. 2. Meanwhile, prep zucchini. Cut into small, quarter size bites. Then, heat 2 tbsp olive oil in a skillet. Add zucchini and sauté until golden, about 6 minutes. During the final 2 minutes, add shallots and garlic powder.
  3. 3. Turn off and transfer zucchini mixture to pasta. Add a tsp of salt and a tsp of pepper.
  4. 4. Add remaining salad ingredients – chickpeas, feta, pistachios, parsley, and dill. Season everything with salt, pepper, and lemon juice. Mix to combine.

  • 1 cup orzo

  • 1 lb zucchini

  • 1 medium shallot

  • 1 tbsp garlic powder

  • 1 15-oz can of chickpeas, drained

  • 3/4 cup crumbled feta cheese

  • 1/2 cup pistachios, roughly chopped

  • 4 tbsp chopped fresh dill

  • 1/4 cup chopped fresh parsley

  • 1 lemon

  • *Note I added air fryer salmon on the top of this for additional protein and healthy fats!
