  1. 1. Preheat oven to 375 degrees F. Grease a 8x8" pan.
  2. 2. Combine all dry ingredients in a bowl. Add wet ingredients and mix to combine.
  3. 3. Add to greased pan and cook for about 20-25 minutes until cooked through.
  4. 4. Top with additional nuts or almond butter if desired.

  • 3/4 cup vanilla protein powder

  • 2 tsp pumpkin pie spice

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1 cup pumpkin puree

  • 1 cup milk of choice

  • 2 eggs

  • 1/3 cup pure maple syrup

  • 1/4 cup coconut oil, melted

  • 1 tbsp vanilla extract

  • 1/2 cup chopped pecans (+ more for toppings; can also use walnuts)
