High Protein Breakfast Biscuits

If you've been looking for a savory breakfast that doesn't skimp on protein, these biscuits are about to be your new go-to. Cottage cheese and cheddar make them rich and fluffy. They come together in one bowl with no rolling pins or biscuit cutters required. Make a batch on Sunday and you've got a grab-and-go breakfast (or the base for a killer breakfast sandwich) all week long.

Ready To Start?

  1. 1. Preheat oven to 375 degrees F. Line a baking sheet with parchment paper.
  2. 2. In a medium bowl mix together flour, garlic powder, onion powder, baking powder and salt. Mix until well combined.
  3. 3. In a separate bowl add cottage cheese, cheddar cheese, and eggs. Whisk until combined.
  4. 4. Add cottage mixture to the dry mixture and mix together thoroughly. When the dough begins to form together, start to use your hands to make one large dough ball. Dough might be slightly sticky, which is ok!
  5. 5. Place dough ball on the lined baking sheet and flatten dough with your hands to form a large rectangle - roughly! Does not need to be a perfect rectangle.
  6. 6. Using a knife, divide the dough into 12 equal parts. Then, space these parts (aka the biscuits) on the baking sheet apart from each other so they have room to bake.
  7. 7. Bake the biscuits for about 20-25 min until thoroughly cooked through. They should be golden brown. Let cool.
  8. 8. Eat as is, or slice in half and make a sandwich!

  • 2.5 cup whole wheat flour (can use GF flour if needed)

  • 2 tsp garlic powder

  • 1 tsp onion powder

  • 2 tsp baking powder

  • 1/4 tsp salt

  • 16 oz cottage cheese (I use 1%)

  • 1 cup shredded cheese

  • 2 eggs, whisked
