  1. 1. Combine all ingredients in a bowl and mix to combine.
  2. 2. Add dressing of choice.

ingredients

  • 3 cups arugula (or another green)

  • 1/4 cup pumpkin seeds

  • 1/4 cup pecans

  • 2 honeycrisp apples

  • 1/4 cup crumbled feta

  • Optional: if you have the time, roast squash to go on top

  • .5 cup flour

  • Protein of choice: chicken, tuna, salmon, hard boiled egg, tofu, beans

  • 2/3 cup vanilla or unflavored protein powder

  • 1 tbsp cinnamon

  • 1 tsp baking powder

  • .5 tsp baking soda

  • .25 tsp salt

  • 1 large apple, diced
