Dark Chocolate Peppermint Brownies
These brownies are rich, fudgy, and full of holiday flavor. You’d never guess they’re made with tofu and avocado—they blend seamlessly to create a smooth, decadent texture and offer 6 grams of protein per serving! Topped with melted dark chocolate and a sprinkle of crushed candy canes, they’re the perfect balance of chocolatey and minty. Ready To Start?
- 1. Preheat the oven to 350F and line an 8×8 baking pan with parchment paper.
- 2. Add the tofu, avocado, milk, cocoa powder, salt, and vanilla to a blender and blend until completely smooth.
- 3. Use a rubber spatula to transfer the mixture to a bowl.
- 4. Mix in the sugar, followed by the flour.
- 5. Transfer the batter to the lined baking pan and cook for 30-35 minutes, or until a toothpick comes out clean. Save the last 3 minutes of baking to add the dark chocolate pieces evenly over the top of the brownies.
- 6. Once the brownies have finished cooking, remove them from the oven and use a rubber spatula to spread the melted chocolate so it coats the entire surface of the brownies. Finish it off by sprinkling the crushed candy canes over the melted chocolate.
- 7. Allow the brownies to fully cool at room temperature so that the chocolate can set. Alternatively, you can place the brownies in the fridge once the pan is cool enough to handle to allow the chocolate to set faster.
- 8. Once the chocolate is set, cut the brownies into squares and enjoy!
