- 1. Combine oats, cottage cheese, eggs, and spinach in a blender. Blend to combine.
- 2. Heat a non-stick stir fry pan on low and grease.
- 3. Make pancakes as you normally would - about 1-2 min per side. Be careful not to burn. Make them about 2 tbsp in size each.
