This recipe is super simple and can be customized to your liking. Just combine eggs and whatever toppings you want for an easy, on the go breakfast!
- 12 eggs
- 2 tbsp diced onion
- ¼ cup diced tomato
- 1/2 cup diced bell pepper
- 1/2 cup chopped spinach
- Preheat the oven to 350 degrees F. Spray a 12 cup muffin tin with cooking spray.
- Whisk the eggs in a large bowl and then divide the egg between the 12 muffin cups
- Add in the toppings of onion, tomato, pepper, and spinach to each muffin cup
- Bake for 15-20 minutes
