Easy Meal Prep Egg Cups

This recipe is super simple and can be customized to your liking. Just combine eggs and whatever toppings you want for an easy, on the go breakfast!

(Servings: 12)


  • 12 eggs
  • 2 tbsp diced onion
  • ¼ cup diced tomato
  • 1/2 cup diced bell pepper
  • 1/2 cup chopped spinach


  1. Preheat the oven to 350 degrees F. Spray a 12 cup muffin tin with cooking spray.
  2. Whisk the eggs in a large bowl and then divide the egg between the 12 muffin cups
  3. Add in the toppings of onion, tomato, pepper, and spinach to each muffin cup
  4. Bake for 15-20 minutes
