Summer Quinoa Salad

This makes for the perfect side dish at a summer BBQ, or as a high protein plant based lunch!

(Makes 2 servings) 


  • ½ cup of uncooked quinoa 
  • ½ cup of edamame 
  • ⅓ cup of corn
  • ½ of a red bell pepper, chopped
  • 1 handful of sliced almonds 
  • Optional lemon juice, red wine vinegar and olive oil to taste


  1. Cook quinoa as directed on the package 
  2. In a large bowl combine quinoa, edamma, corn, pepper and almonds
  3. Toss with dressing of choice or drizzle on red wine vinegar, lemon juice and olive oil to taste
